Greektown Garden Sausage and Vegetable Bowl
Ingredients
1 1/2 pounds chicken sausage or tofu sausage cut into 1/2-inch rounds
1 head broccoli cut into florets
1 red bell pepper thinly sliced
1 yellow bell pepper thinly sliced
8 ounces green beans
1 pouch Greektown Garden
2 tablespoons Olive Oil
1 1/2 cups dry quinoa prepared according to package directions or brown rice
Instructions
Preheat oven to 400°F.
Chop veggies while oven preheats, spread across baking sheet
Sprinkle Greektown Garden on and drizzle with olive oil
Roast for 20-25 minutes, stirring halfway through cooking time.
Cook brown rice or quinoa as directed while vegetables roast
Layer/Combine in bowl (Rice, Veggies and Top with Sausage Slice)
